
Bertha’s Brownie Pancakes at Palmer House -Chicago
As my son is a budding paleontologist, we took an opportunity to visit Chicago to see the most complete T-Rex ever, Sue, at the Field museum. Her original body bones are on the life size display and her original skull can be examined through a clear preservation case. She is so impressive and those backwards slanting, serrated teeth could have easily torn into some Sauropod shaped pancakes back in the Cretaceous!
Palmer House
We stayed downtown at the historical Palmer House, now a Hilton hotel. The Palmer House was a wedding gift from Potter Palmer to Bertha Honore Palmer. The original hotel burnt down in the Great Chicago fire after just being opened for only 13 days. Potter Palmer was able to rebuild and opened again in 1873. Now the longest-operating hotel in the US, it is known as the first hotel to incorporate the light bulb, the telephone, and the vertical steam lift (elevator) as well as create the brownie!

These were a quick grab from the Lockwood Express on the lobby floor of the hotel. This chocolate brownie is delicious, chewy, rich, dense almost like fudge, though not as sweet as our well-known current boxed brownies or typical fudge. The topping is made of small, soft walnuts in an apricot glaze (jam-like) which balances the rich chocolate.
