Mom's Pancakes

Simple delicious fluffy pancakes!

Ingredients
  

  • 2 Cup Flour
  • 2 Tbsp Sugar
  • 4 tsp Baking Powder
  • 1 tsp Salt
  • 2 Eggs
  • 1 1/2 Cup Milk can use milk substitutes
  • 1/4 Cup Vegetable Oil
  • 1/2 tsp Vanilla Extract

Equipment

  • griddle, mixing bowl

Method
 

  1. Heat the griddle on low to medium heat.
  2. Mix ingredients together in a bowl until combined and there are no large lumps. Do not over mix.
  3. The griddle is ready when water splashed on it dances around.
  4. Use a 1/4 cup to pour batter onto griddle.
  5. Flip the pancake when it starts to bubble (usually around 1.5 minutes) and cook another 1-2 minutes until golden.
  6. Plate and serve!
